Cut small pieces of meat and potatoes; wash and drain them separately. Add some salt, turmeric, or saffron for colour. Heat oil in a pan and deep fry the potatoes till golden brown. Set them aside. Add chopped onions, clove, bay leaves, and cook them in the same oil until the chopped onion becomes tender.

Add some water and other spices like cumin, red chilli, cinnamon, and cardamom powder. Cook until the spices release oil. Add the meat to the mixture and cook for another 5 minutes. Add mace-nutmeg-papaya paste, and cook for another 15 to 20 minutes or until the meat becomes tender. Add fried potatoes and cook for another 15 minutes or until gravy is partially dried.

Yogurt chicken curry
Doi murgi or yogurt chicken curry is yet another popular food in Bangladesh. Marinate chicken for 2-3 hours with spices, including salt, finely chopped garlic, black pepper, chilli powder, lemon juice, and cumin powder. Heat the mustard oil and add onions, salt to taste, bay leaves, cardamom pods, clove, and cinnamon sticks. Cook until the onion turns golden brown. Add 100-125ml water and simmer it for 10 minutes. Once the spices have been cooked thoroughly, add green chillies, to taste and the chicken marinade. Cook for another 35 – 40 minutes until the marinade and spices blend perfectly, forming a thick gravy.

Roasted lentil soup
The popular food recipe from Bangladesh packs a punch of flavor and takes minimal effort to prepare. Dry roast moong dal (yellow lentil) for 8 – 10 minutes in medium heat making sure to stir constantly to prevent burning. Once roasted, pour them in a bowl of cold water. Separate the lentils with a spoon if they clump together. Soak them for 10 to 15 minutes, clean, and set them aside

Heat vegetable oil in a frying pan or wok, and fry ginger garlic paste until it turns light brown. Add chopped onions, cinnamon, bay leaves, cardamom, and salt and cook for at least 10 minutes. Pour some water and simmer for 5 minutes. Add the soaked lentils with 500ml water and simmer for 15 to 20 minutes until the lentils soften. Heat ghee separately and add whole red chillies and garlic and cook them until light brown. Remove the soup in a serving bowl and pour ghee with chillies and garlic on top.

Fish korma
Rui macher korma or fish curry is yet another popular food recipe in Bangladesh. Clean and rinse pieces of Rui fish and add at least half a teaspoon of ginger-garlic paste and salt to taste, mix well, and fry the fish until golden brown. Cook onions until light brown and add ginger garlic paste, cumin, coriander, and red chilli powder. Add some water and simmer for 5 minutes. Whisk milk and yogurt in a separate pan. Once boiled, add the fried fish fillet. Flip over to cook the other side. Once cooked, add cooked onion and spices mixture and cook for another 4 to 5 minutes. Add ghee and green chillies before serving hot.
