To make the oatmeal streusel topping, which is nothing but the crumbly topping on the muffin, grab a small bowl and mix the oats, brown sugar, cinnamon, and melted butter.
To make the muffin batter, whip the butter and sugar together until they are light and fluffy. Take another bowl, beat the eggs, and add the sugar and butter mixture to this bowl. Add mashed bananas and strawberries to it. Now take all the dry ingredients like flour, baking soda, and salt and carefully sift them into the bowl which contains the mixture. Later, pour this prepared mixture into the muffin cups and add the streusel toppings on each of the muffins. After 5 minutes of baking, reduce the oven temperature to 350° F and continue to bake for the next 15 minutes. Ta-da! Your muffins are ready to be devoured. For making this healthy breakfast recipe, you will need two organic oranges, a cup of egg whites, almond flour, oat flour, double acting baking powder, and one cup of erythritol for the sweet taste. To make the orange puree, wash the oranges and pierce them all over with a knife. Then place them in a pot, add water and let it boil. Let it simmer for an hour until the oranges turn soft and tender. Drain the water and let them cool. Once they have cooled down, remove their seeds and blend them into a puree.
Preheat the oven to around 350° F. To prepare the cake batter, blend the almond flour, oat flour, baking soda, and erythritol together in a small bowl and keep them aside. In another bowl, mix the orange puree, egg whites, and almond flour. After this, mix the ingredients of both the bowls together and ensure that there are no lumps. Pour the cake batter into a well-greased cake pan and bake the cake for about an hour. Once the cake is ready, take it out and let it cool. Slice them later and serve. The best thing about this dessert is that you can indulge in your sweet tooth without having to worry about the calories.
